Some of the best dinners aren’t carefully planned, they’re created from whatever vegetables are left in the refrigerator.
This One Pan Kielbasa and Vegetables recipe is one of my favorite weeknight meals because it’s quick, incredibly flexible, and helps reduce food waste. (But most of all, it’s just absolutely delicious!!) Whether I have carrots that need to be used, extra bell peppers, or a handful of vegetables nearing the end of their life, this meal brings everything together into one colorful, satisfying dinner.
Since kielbasa is already fully cooked, all you’re really doing is roasting the vegetables until they’re tender and warming everything together. It’s simple, flavorful, and only requires one pan for easy cleanup.

Ingredients
There are no strict rules for this recipe—that’s what makes it so great!
Base Ingredients
- 2 packages kielbasa, sliced into bite-sized pieces
- Bell peppers
- Onion, chopped chunky
- Olive oil
- Garlic, minced
- Salt
Optional Vegetables
- Eggplant
- Yellow squash
- Zucchini
- Potatoes
- Cherry/ Grape tomatoes *highly recommend*
- Celery
- Broccoli
- Cauliflower
- Brussels sprouts
- Green beans
- Winter squash
Every batch turns out a little different depending on what’s in the refrigerator.
Instructions
Step 1: Prep the Vegetables



Wash and chop all of your vegetables into similar-sized pieces so they cook evenly.
If you’re using denser vegetables like carrots or winter squash, cut these smaller so they cook quicker with the more delicate veggies.
Step 2: Slice the Kielbasa

Cut the kielbasa into bite-sized pieces.
Because it’s already fully cooked, you only need to heat it through while the vegetables roast.
Step 3: Season Everything
Place all of the vegetables and kielbasa onto a large sheet pan.
Drizzle generously with olive oil.
Season with:
- Salt
- Garlic
You can also add any of your favorite seasonings, including:
- Italian seasoning
- Smoked paprika
- Black pepper
- Onion powder
- Cajun seasoning
- Garlic herb blends
Toss everything together until evenly coated.

Step 4: Roast

Bake at 425°F for approximately 20–30 minutes.
I usually begin checking around the 25-minute mark.
Cooking time will vary depending on which vegetables you’re using and how big of a batch. Test the thickest vegetable—usually the carrots or potatoes—to make sure they’re tender without becoming mushy.
Serving Ideas
This meal is delicious on its own, but you can also serve it with:
- Rice
- Pasta
- Mashed potatoes
- Crusty bread

*Just be sure to thoroughly cook any meat you use, kielbasa is already cooked
Should I salt eggplant first?
Some people prefer to salt eggplant to draw out excess moisture before cooking.
For this recipe, I usually skip that step since I don’t mind my eggplant being a little soggy 🫢
Can I make this for a smaller family?
Absolutely!
As a family of six, I usually make a double batch using two packages of kielbasa so we have leftovers.
For smaller households, simply use one kielbasa and as many veggies as you want.
